Pork Meatball Parmesan

Ingredients

  • 1 lb Meyer Natural Ground Pork
  • 2 slices White bread (torn into small pieces)
  • Milk (1/3 cup)
  • 1/4 tsp Red chili flakes
  • 1 tsp Onion powder
  • 1/4 tsp Garlic powder
  • 1 cup Parmesan cheese (divided)
  • 1 tbsp Vegetable oil
  • 2 cups Spaghetti sauce
  • 1 cup Shredded mozzarella
  • 1 tbsp Fresh parsley (chopped)
  • Salt and pepper to taste

Preparation

I'm sure you have heard of chicken Parmesan, but how about meatball Parmesan?  This dish is very similar to the classic chicken version.  It has juicy seasoned meatballs that are smothered in a tomato sauce sauce, then baked in the oven topped with bubbly mozzarella and Parmesan cheese.  Delicious.
 
Serve these little bits of heaven with cooked spaghetti or crunchy crostini.  They make an awesome appetizer or meal.  They also make excellent leftovers or a super lunch on the go. These are sure to be a hit!  I mean, who doesn't love meatballs?

 

1. Place the bread in a large bowl and pour the milk over it.  Smash the softened bread up with a fork, then add the ground pork, chili flake, onion powder, garlic powder, ¼ cup of the Parmesan cheese, salt, and pepper.  Knead the mixture with your hands until it is completely combined.  Form the meat mixture into 24 meatballs.  Wet your hands to keep the meatballs from sticking.
 
2. Preheat the oven to 400ºF.
 
3. Place a large, oven-proof skillet over medium heat.  Add the oil followed by meatballs and brown on all sides, about 5 minutes per side.  It's okay if the meatballs are still slightly raw in the middle.  Pour the spaghetti sauce over the meatballs and sprinkle with the mozzarella and remaining ¾ cup Parmesan cheese. 
 
4. Transfer the meatballs to the oven and cook until the sauce bubbles and the meatballs are completely cooked, about 15 minutes.  Sprinkle with parsley and serve with your favorite spaghetti or noodles.
