Broiled Asian Sticky Ribs

Ingredients

  • 4 lbs Meyer Natural Pork (back ribs, cut in half)
  • 2 tsps Chipotle powder
  • 2 tbsps Brown sugar (plus 1/3 cup, divided)
  • 2 tsps Ground allspice
  • 2 tbsps Onion powder
  • 1 tsp Garlic powder
  • 2 tsps Ground ginger
  • 1 tbsp Vegetable oil
  • 1 1/2 cups Ketchup
  • 1/2 cup White vinegar
  • 1/2 cup Soy sauce
  • 2 cups Water
  • 2 Scallions (sliced)
  • Salt and pepper to taste

Preparation

1. In a medium bowl, stir together the chipotle powder, 2 tablespoons brown sugar, allspice, onion powder, garlic powder, and ground ginger.  Generously season the ribs with salt and pepper, then rub with the chipotle mixture.
 
2. Preheat the oven to 400ºF.
 
3. Place a large skillet over medium heat.  Add the vegetable oil followed by the first rack of ribs and brown on both sides, about 4 minutes per side.  Transfer to a non-metal baking dish.  Repeat with the other half of the ribs.
 
4. In a large bowl, whisk together the remaining 1/3 cup brown sugar, ketchup, vinegar, soy sauce, and water.  Pour over the ribs and cover with foil.  Bake the ribs until they are almost tender, about 1 1/2 hours.
 
5. Preheat the broiler.
 
6. Transfer the ribs to a broiler pan lined with aluminum foil.  The cooking juices should be the consistency of bbq sauce.  If the juices are too thin, transfer to a saucepan and reduce.  Brush the ribs with the sauce and broil until sticky.  Repeat the process until all of the sauce is used up. 
 
7. Allow the ribs to rest for at least 5 minutes, then cut into individual ribs and sprinkle with sliced scallions.
